Whet Your Appetite

The Bay Club , at Westshore Yacht Club, offers a plethora of signature dishes and drinks to whet your appetite and quench your thirst. One of the signature dishes at the Club puts a different spin on traditional seafood, Lobster Mac & Cheese. We also recently released new menu at The Bistro, Eight O’ Six and Poolside including an array of cultural flavors for lunch and dinner. At Westshore Yacht Club’s Bay Club, we don’t often reveal culinary secrets but this recipe has been asked for so often, how could we resist?

Lobster Mac & Cheese

This recipe will serve two.

Ingredients:

  • 3 tbsp. olive oil
  • 1 tsp. chopped garlic
  • ½-cup diced tomatoes
  • ½-cup cooked bacon pieces
  • ¼-cup sliced green onion
  • ¼-cup sherry
  • 1 cup cooked lobster meat
  • 2 cups heavy cream
  • 2 tsp. lobster base (Better than Boullion® brand recommended)
  • 2 cups shredded cheddar cheese
  • 3 cups cooked corkscrew pasta
  • Salt & pepper to taste
  • 1-½ cups crushed cheese crackers

Method:

  • In a large sauté pan, cook the olive oil, garlic, tomatoes, bacon and green onion until garlic starts to brown.
  • Deglaze the pan with sherry.
  • Add heavy cream, lobster meat and lobster base. Bring to a boil and reduce heat by 30%.
  • Whisk the cheese into the mixture slowly until all ingredients are combined.
  • Add pasta and toss until hot.
  • Place all into an oven-safe dish and sprinkle with crushed cheese crackers.
  • Bake at 400 degrees for approximately five minutes or until crackers are brown and dish is bubbly.
  • Serve immediately. Enjoy!
